It's really not about me but what God in His grace has allowed me to be.
Have you ever wondered what real food is, and are you confused about the many choices that you have in the grocery store? Have you ever given much thought to how that steak eventually wound up on your grill, or that baked potato - who grew it and where?
Hi, my name is Debbie, and you may be like I was. I didn't have a clue either. Oh, for many years, I thought I did. I felt pretty confident that I could pick a healthy choice when it came to food. Then one day my world was turned upside down.
I was buying the best stuff - if it was packaged nicely and looked good, it must be the best! I didn't use butter, coconut oil, or animal fats, because I thought that saturated fats are what clogs our arteries, and since I was already on cholesterol medication, I sure didn't need to add to the trouble. Anyway, the squeeze margarine in the bottles made life just so convenient. I didn't have to keep it cold, and it just sat out on my counter because I used it daily in all my food preparations, and vegetable oil was my top choice of oil in the kitchen. I shudder to think now that breakfast for my sweet children was the best brand name pop tart slathered in the best brand name squeeze margarine.
To insure my health, I even made sure that I never missed a single dose of my medications, like blood pressure, cholesterol, and sleep prescriptions, and I was so thankful that I could afford medication because there were so many who couldn't.
On the day that I realized that my knowledge of healthy was really not, I came home and looked in the cupboard and saw that there was no real food in there. I threw it out and started over. I felt like I was actually an alien in this world, and that I was just zapped down on the planet without a clue about what to do next in the way of food. It was overwhelming to say the least. And my children had all grown and gone, and I felt so bad that for all their years, I thought I had fed them healthy food.
I can't believe that for most of my life, I have thought that the foods in the grocery store were of excellent nutrient dense quality. Where was my mind when I purchased the meat on the shelves, not even realizing that the poor animal was given high does of antibiotics just to make it to slaughter day, and what about the fresh vegetables and fruits - where was my mind? Why hadn't I realized that most of them had traveled hundreds of miles, losing nutrients daily, and had been sprayed with pesticides, herbicides, and preservatives? Where was my mind when I purchased the so-called food listed on the nutrition labels?
Since that day that I realized that my healthy life was indeed not the case, my mind became open to the truth of the food industry, and I have learned so much about nutrition and how the body works, and I am happy to say that I now live a prescription free life. Yes, I have a passion for knowledge, but I know I will never learn it all. God is amazing, and only He knows it all. I stand in awe at His creation of real food for our bodies, and I'm left shaking my head at what man has done to it. I am at least thankful that I have a teachable spirit, because had I not had, then I would still be basking in "my knowledge" of healthy. I hope that you will approach this website with a teachable spirit, too. My goal is to share the knowledge I have learned, so that, I will be able to help others make wise choices in the foods they purchase. The purchase will either be a life giving purchase or a life robbing purchase.
To begin to learn more about healthy eating choices, I encourage you to visit the Weston A. Price Foundation at http://www.westonaprice.org/ and check my site often. I will be sharing information that I will be learning and have learned, that has helped our family live a healthier lifestyle.
On October 2, 2012, I enrolled at Hawthorn University so that I could sharpen my education in the holistic realm and learn how the body functions so that I could help my family and my clients. I graduated in October 2015. I searched for an educational institution that would help me channel all the zeal I had to learn more about the body and optimal nutrition and lifestyle. Hawthorn University was recommended by a friend and had the stamp of approval from the WAPF as well, so I chose to enroll into the Nutrition Consultation certificate program. While I was eager to learn about the various health related illnesses and get to the recommendations for each of them (which I did eventually), I saw that the first courses were so important to build a foundation on which to draw from, since basically most all undesirable health-related situations can be traced back to improper diet and lifestyle. I have found that going back to the basics is essential for all cases and should be addressed in every circumstance with people I work with. This is foundational. Hawthorn University has provided me with all the tools necessary to support anyone with the desire to live a healthier life.
I enjoy life, and I'm thankful to the One who gave it to me. I believe in Jesus Christ, and He alone can save me from my sins.
I am married to a wonderfully talented husband who loves me and supports me beyond measure. I have two sons, two daughters-in-law, four grandchildren, two dogs, 4 cats, 10 chickens, and a big farm in which we all happily roam.
Be healthy,
Debbie Vail
